Spinach Frittata with Sun-Dried Tomatoes and Feta Cheese
We have had consistent house guests for the last few weeks as everyone wants to come meet our new little boy. Being that we’ve been on our sugar elimination challenge, I was trying to find some great recipes to make for breakfast that didn’t involve the typical cereal, bagels, etc.
I discovered this Spinach Frittata Recipe from Simply Recipes.
- 1 lb spinach leaves
- 1 Tbsp olive oil
- 1 medium onion, chopped (about 1 cup)
- 1 large clove garlic, minced
- 9 large eggs
- 2 Tbsp milk
- 1/3 cup grated Parmesan cheese
- Sun-dried tomatoes, about 2 Tbsp chopped
- Salt and freshly ground pepper to taste
- 3 oz goat cheese
These are the ingredients from the original recipe. I would have liked more sun-dried tomatoes but didn’t have any more (not sure I had a full 2 tbsp either). I also didn’t have any goat cheese so I made it with feta cheese and it was great as well.
