Sweet potatoes might possibly be my family’s FAVE carb. We eat it for breakfast. We make it into french fries. I have an ah-mazing sweet potato pizza recipe we make! These roasted sweet potatoes don’t disappoint.
AND, the fact that they grow so easy means we almost always have them in the backyard. PS- they are drought tolerant if you live in an area where you’d love having some ground cover and have little water.
We seriously love sweet potato. These roasted sweet potatoes are the simplest way we make them. Just slice, roast, and they’re ready to go!
- 1-2 sweet potatoes
- Olive oil
- 2 limes
- Dash of salt
- Slice sweet potatoes.
- Drizzle with olive oil.
- Squeeze juice of 2 limes over them
- Add a dash of salt
- Toss to coat.
- Bake at 350 till tender (do not turn or stir)
- Top with chopped cilantro
- Serve and enjoy!
