Bitchin’ Beet & Carrot Wrap

Any way I can add in extra veggies to my diet, I’m all about. And when I find a super yum and delish way to do it, it’s just icing on the cake! This wrap is one of THOSE recipes for me.  This Bitchin’ sauce is one of my faves! I could eat it with carrots, chips, cucumbers, pitas, you name it.  And the chipotle flavor is by far the most addicting!

 

My mouth is watering right now just thinking about it!

 

It can be a little messy to make because of the beets which will leave anything it touches a beautiful shade of pink. But when you taste it, it’s all worthwhile.

 

How to Make it!

  1. Take a paring knife down the stem of a collard green leaf so that you cut off the bulk of the ridge.  This makes the collard green fold like a tortilla rather than have a stiff spine down the middle.
  2. Spread 1 tbs Bitchin Sauce (my favorite is Chipotle flavored). If you don’t have Bitchin Sauce, hummus will do. Or try making your own.
  3. Shred carrots and beets and layer on top of sauce.
  4. Add a layer of turkey if desired. Otherwise just roll it up and dig in!
